JupyterHub: Limited Access to S3 Buckets

Since the evening of February 11, 2025, there has been a major issue on CDSE affecting access to the EODATA bucket. As a result, opening a Jupyter User session was not possible.

A workaround has been applied to JupyterHub, removing all mount of all S3 buckets. Users can now open Jupyter sessions, but access to S3 buckets like EODATA and Public remains unavailable.
